Hand-harvested and neutral barrel fermented
Light straw color from minimal skin contact during pressing. The aromas lead with honey and chamomile then develop into deeper tones of petrol, bee pollen, quince, and lime zest. Flavors of acidic stone fruit and bergamot play well with an element of wet stone. An exceptionally long finish with pleasing hints of bitterness balanced by opulent honeycomb.
