Acidity is the foundation of this white wine. Picked before the rains set in for the 2019 season, this wine is bright and crisp. Whole-cluster pressed then fermented in neutral oak barrels for 12 months sur lie where malolactic fermentation was completed. With incredible natural acidity helping to retain freshness and stability, we took a leap of faith (and science) and bottled with 'minimal sulfur' (aka zero). Natural wine lovers... come and get it!
